This is one of my favourite recipes. It’s a nourishing soup packed with vitamin C, antioxidants, beta-carotene and lycopene, and spicy as well which is great especially during the winter months, totally warms you up through and through – love spice!
Ingredients
Serves 4
1 tbsp. olive oil
1 onion, chopped
2 garlic cloves, chopped
2 organic carrots, washed and chopped (peel the skin if not organic)
5 organic tomatoes, chopped
1 litre vegetable stock
½ tsp. cumin
¼ tsp. chilli powder
Handful fresh coriander, chopped leave some for garnish
Directions
- Heat the oil in a medium saucepan. Add the onion and garlic and sauté for 5 mins.
- Add the carrots and stir over low heat for 5 mins.
- Add the tomatoes, spices and stock.
- Season with salt and pepper and bring to the boil. Cover the saucepan and simmer for 30 minutes.
- Pour into a blender, add some of the fresh coriander and blend until smooth.
- Return the soup to the saucepan, heat through and adjust seasoning if required.
- Pour into individual bowls, garnish with remaining fresh coriander, serve and enjoy the warmth!
