Spicy Carrot & Tomato Soup

This is one of my favourite recipes. It’s a nourishing soup packed with vitamin C, antioxidants, beta-carotene and lycopene, and spicy as well which is great especially during the winter months, totally warms you up through and through – love spice!

Ingredients
Serves 4

1 tbsp. olive oil

1 onion, chopped

2 garlic cloves, chopped

2 organic carrots, washed and chopped (peel the skin if not organic)

5 organic tomatoes, chopped

1 litre vegetable stock

½ tsp. cumin

¼ tsp. chilli powder

Handful fresh coriander, chopped leave some for garnish

 

Directions

  1. Heat the oil in a medium saucepan. Add the onion and garlic and sauté for 5 mins.
  2. Add the carrots and stir over low heat for 5 mins.
  3. Add the tomatoes, spices and stock.
  4. Season with salt and pepper and bring to the boil. Cover the saucepan and simmer for 30 minutes.
  5. Pour into a blender, add some of the fresh coriander and blend until smooth.
  6. Return the soup to the saucepan, heat through and adjust seasoning if required.
  7. Pour into individual bowls, garnish with remaining fresh coriander, serve and enjoy the warmth!
