I absolutely love jam but a lot of them are laden with heaps of sugar with isn’t the best, so now I make mine. Huge discovery for me and with persistent trial and error, and pointers from a couple of awesome chefs ideas, I have a sugar-free, healthier option. So simple and contains very few ingredients!
Berries are full packed with nutrients and antioxidants, and chia seeds are high in protein, fibre, omega-3, antioxidants and minerals, can’t go wrong.
Ingredients
- 1 1/2 cups frozen mixed berries (can use fresh as well)
- 1 tsp fresh lemon juice
- 1 tbsp maple syrup
- 1/4 tsp cinnamon
- 2 tbsp chia seeds
- 1/4 cup water
Directions
- Place the fruit, lemon juice and half the water in a small saucepan over medium-high heat. Simmer 15 minutes until it bubbles and breaks down.
- Add the maple syrup and stir for about 1 – 2 minutes
- Remove from the heat and stir in the chia seeds until well combined, then let it sit at least 20 – 30 minutes to allow the chia seeds to gelatinize.
It will keep in an airtight glass container in the refrigerator up to 7 days.
