Probiotic Protein Breakfast

I woke up this morning not thinking of what I’d have for breakfast then I checked out what I had in my refrigerator and kitchen cabinets and was inspired with this nourishing beauty – recipe below!

Here’s how this breakfast nourishes you – kefir contains probiotics your gut needs for optimum health. Kefir grains contain around 30 strains of bacteria that help improve the gut microbiome. They also contain nutrients and potent antibacterial properties that are great for overall health. Kefir helps boost the immune system, keep allergies and asthma under control, is a cancer-fighter, provides potassium punch and improves lactose intolerance symptoms.

Chia seeds are a good source of protein and omega-3 fatty acids, rich in antioxidants and provide fibre, iron and calcium. Bee pollen contains vitamins, minerals, protein, lipids and carbohydrates. It comes from the pollen that collects on the bodies of bees.

Bee pollen is used for overall health maintenance, good for hormone health, asthma, allergies, reduces inflammation and stimulates the immune system. Goji berries and pomegranates contain high amounts of antioxidants which help boost and strengthen the immune system. Now see why this is such a nutrient powerhouse breakfast. This recipe below makes for one, double the ingredients to make for more. I have purposely not included any natural sweeteners I would normally use such as maple syrup because the fruits and sprinkle of cinnamon in there give you just the right amount of sweetness you need! Enjoy!!

Ingredients

1-cup coconut kefir (dairy options are ok as well)

1 tbsp. cashew butter (any nut butter is fine)

2 tbsp. chia seeds

1/2 banana, chopped

1/4-cup goji berries

1/4-cup pomegranate

1/4 tsp. cinnamon

1 tsp. desiccated coconut

1 tsp. bee pollen

Directions

  • Add the cashew butter, bee pollen and kefir to a glass and mix until the butter completely mixed in
  • Add the chia seeds, mix in thoroughly and let it set for a couple of minutes
  • Top with the banana, pomegranates, and goji berries
  • Sprinkle the desiccated coconut over and dust with cinnamon
  • Finally, sit and enjoy!
