During the holidays, one of the best and most enjoyable aspects is getting to enjoy time with your family and friends. This often includes preparing a meal for people with different food preferences, including those on a vegan diet. I’m not vegan, I eat a pretty healthy mostly plant-based diet however I realize I’ve got some avid vegan followers and some of my plant-based recipes would be great for vegans so. Here are three meal ideas that are completely plant-based, so any guests who are on a vegan diet have delicious options available. Best thing about these recipes is that they’re so good, anyone can have them. Enjoy!!
Kale Salad
A kale salad with a simple yet tasty dressing can be a great way to go.
Ingredients
- 1 bunch kale
- 1 avocado, diced or sliced
- ¼ pear, diced
- ½ cucumber, diced
- ¼ raw cup almonds
- 1 cup pomegranate
Dressing
- Juice of a ¼ orange
- 1 tbsp. apple cider vinegar
- 2 tbsp. extra virgin olive oil
- ½ tsp. maple syrup
- ½ tsp. poppy seeds
Directions
- Slice or break up some kale in a bowl,
- Add the avocado, pear, almonds, pomegranates and cucumber then toss the salad.
- Mix the ingredients for the dressing in a small bowl, whisk for about 30 seconds and drizzle over salad
- Toss and mix properly and serve
BBQ Brussels Broccoli Side Dish
These are super easy to make.
Ingredients
- 200g Brussel sprouts, chopped into bite size pieces
- Half head broccoli, cut into bite size pieces
- 1 red onion, sliced
- 2 tbsp. olive oil
- ½ tsp. pepper (use less if required)
- ¼ tsp. salt
- ½ tsp. ground nutmeg
- ½ tsp. paprika,
- ½ tsp. clove powder
- ½ tsp. garlic powder
Directions
- Preheat oven to 180 degrees
- Mix spices together in a bowl and sprinkle over veggies, leave a little for garnish later
- Add the olive oil to the veggies and mix thoroughly
- Spread veggies over baking sheet and place in the oven for 15 – 20 minutes or until seasonings look baked in
- Once cooked, take them out and lightly dust with a bit more of the seasoning and serve.
Shepherd’s Pie
Here’s a great recipe that’s easy and delicious. Most people have heard of shepherd’s pie but this one is completely vegan and gluten free.
Ingredients
- 4-5 large sweet potatoes
- 3 tbsp. olive oil
- Salt
- Pepper
- ½ cup corn
- ½ cup peas
- ½ cup green beans
- 1 cup lentils
- 1 1/2 cup vegetable stock
- 1 onion, chopped
- 2 cloves garlic, crushed
Directions
- Boil the sweet potatoes until soft
- Place them in a bowl, add the olive oil, pinch of salt and ¼ tsp. freshly ground black pepper
- Mash and set aside
- Preheat the oven to 180C
- Sauté the onions and garlic in a pan until browned
- Add the lentils and vegetable stock, simmer for 20 minutes
- Add the veggies and simmer until most of the liquid has evaporated
- Transfer to a baking dish and cover with the mashed potatoes
- Bake for 15 minutes in the oven or until the top is brown
- Serve and enjoy
