Mint Chocolate Truffles

I so love my snacks especially when they contain chocolate and these are especially one of my favourites. Best thing about them is they contain natural sugar from dates and contain vitamins, minerals and antioxidants to boost and nourish you at the same time satisfy that sugar craving you sometimes have!

Ingredients

1-cup pitted dates

½-cup goji berries (optional)

1 tbsp. coconut oil

½-cup cashew butter (almond butter works as well)

3 tbsp. cacao powder

2 drops peppermint oil (I use a brand called DoTerra, these are therapeutic grade essential oils, completely pure, natural and free from any synthetic additives)

1 tsp. cinnamon powder (can also use a drop of cinnamon oil from DoTerra)

Directions

  1. Place the goji berries dates in a food processor and whizz until it forms a smooth paste
  2. Add all the other ingredients and mix until it forms a doughy texture
  3. Pick small amounts and roll into individual balls (should make about 10)
  4. Roll and coat each truffle in the desiccated coconut, place on a tray or plate
  5. Put the truffles in the freezer for about 20 – 30 minutes to set
  6. Take out and server after 10-minutes or put in the refrigerator
  7. Truffles can keep for a week in the refrigerator but I’m not sure they’ll last that long!!
