Yummy Healthy Almond Cookies

1 ¾ cup ground almond flour

¾ cup coconut palm sugar

1 tbsp. chia seeds

2 tbsp. cold water

1 tbsp. maple syrup

1 ½ tsp. cinnamon powder

1 tsp. vanilla extract

Handful chocolate chips (optional)

 

  1. Place chia seeds and water in a small bowl, whisk together with a fork and let sit for 10 minutes
  2. Place coconut palm sugar, almond flour, cinnamon and vanilla in a food processor and mix.
  3. Add chai seeds, maple syrup and combine until dough sticks together. If dough is crumbly, add a bit more water.
  4. Add chocolate chips if using and mix in.
  5. Roll dough between two pieces of baking paper and flatten. Use a cookie cutter to cut into shapes or round discs about 5mm thick.
  6. Place on oven tray lined with baking sheet and cook in the oven for 8 minutes at 160C/325F
  7. Enjoy warm or allow to cool and have with a beautiful cup of chai latte🙂
