This has become one of my favourites for breakfast or snack anytime, totally loving it right now cause it’s so totally guilt, gluten and processed ingredients free it’s unreal:-)!!! Oh and another thing, it’s so easy and quick to make!
- 3 ripe bananas
- 1/4 cup coconut oil, melted
- 2 free range eggs
- 1/2 cup organic blueberries
- 1/4 cup maple syrup
- 1/2 cup almond meal
- 1/2 tsp aluminium – free baking powder
- 1/4 tsp sea salt
- 1/2 tsp ground cinnamon
Method

- Preheat oven to 175º C. Mash bananas with a fork or in a food processor
- Whisk the eggs until fluffy and then combine with the mashed bananas and wet ingredients.
- Add the dry ingredients and combine.
- Add the blueberries, mix and transfer batter to a baking pan
- place in the oven and bake for 30 – 45 minutes
- your banana bread is ready when a knife comes out clean and the edges are browned.
- Allow to cool completely before storing in an airtight container in the fridge or eat while still warm!
