Homemade Banana Bread

This has become one of my favourites for breakfast or snack anytime, totally loving it right now cause it’s so totally guilt, gluten and processed ingredients free it’s unreal:-)!!! Oh and another thing, it’s so easy and quick to make!

  • 3 ripe bananas
  • 1/4 cup coconut oil, melted
  • 2 free range eggs
  • 1/4 cup maple syrup
  • 1/2 cup almond meal
  • 1/2 tsp aluminium – free baking powder
  • 1/4 tsp sea salt
  • 1/2 tsp ground cinnamon

Method

    1. ​Preheat oven to 175º C. Mash bananas with a fork or in a food processor
    2. Whisk the eggs until fluffy and then combine with the mashed bananas and wet ingredients.
    3. Add the dry ingredients and combine.
    4. add the blueberries, mix and transfer batter to a baking pan
    5. place in the oven and bake for 30 – 45 minutes
    6. your banana bread is ready when a knife comes out clean and the edges are browned.
    7. Allow to cool completely before storing in an airtight container in the fridge or eat while still warm!
    8. I sometimes have this with homemade mixed berry jam or cashew cream when I really want to indulge and it’s so yummy!! Check out the recipe here!
