Homemade Banana Bread

This has become one of my favourites for breakfast or snack anytime, totally loving it right now cause it’s so totally guilt, gluten and processed ingredients free it’s unreal:-)!!! Oh and another thing, it’s so easy and quick to make!

  • 2 ripe bananas
  • 1/4 cup coconut oil, melted
  • 1/4 cup chopped hazelnuts (use any nuts of your choice)
  • 4 free range eggs
  • 4 fresh dates, pitted and chopped
  • 1 tbsp maple syrup or raw honey (optional)
  • 1/2 cup coconut flour
  • 1/2 tsp aluminium – free baking powder
  • 1/4 tsp sea salt
  • 1/2 tsp ground cinnamon

    1. Preheat oven to 175º C. Mash bananas with chopped dates (soak dates in water for about an hour if they’re hard to soften up).
    2. Whisk the eggs until fluffy and then combine with the mashed bananas and dates.
    3. Stir through the oil and maple syrup/ honey (if using syrup bit i find you don’t need to use them cause you already have the sweetness of the dates and bananas).
    4. combine well.
    5. with baking paper. The mixture will be quite thick; flatten and smooth with a spatula.
    6. ready when a knife comes out clean and the edges are browned.
    7. Allow to cool completely before storing in an airtight container in the fridge or eat while still warm!
    8. I sometimes have this with homemade mixed berry jam when I really want to indulge and it’s so yummy!! Check out the recipe here!
