Choconut Snack Balls

This is a healthy nutritious snack to enjoy at any time at home, as a dessert or on the go. I use only 1 tbsp. of sweetener because the dates add some sweetness to the snack so you don’t really need more.

5 dates
½ cup goji berries
1 cup almonds
Two tbsp. almond butter
¼ cup sesame and pumpkin seeds
½ cup coconut chips
1 tbsp. coconut oil
2 tbsp. cacao powder
1 tbsp. honey or agave nectar
1 tsp. chia seeds

1. Chop the almonds, coconut chips, sesame and pumpkin seeds in a food processor and set aside in a bowl
2. Next, chop the dates in the food processor and add to the chopped almonds mix
3. Add the cacao powder, coconut oil, honey or agave, almond butter and chia seeds to the mix
4. Now you’re going to have to use your hands for this next step so make sure they’re clean
5. Mix the ingredients completely with your hands, like you’re kneading pastry.
6. Once it’s all mixed together properly, take half a handful, roll into balls and place them on a plate or in a bowl
7. Put the balls in the refrigerator for about an hour to set it properly. They will harden up slightly – enjoy at home or on the go.
