Choconut Truffles

I love these little babies, they are my go to snack especially when I need a chocolate fix. These yummy snacks are packed full of nourishing ingredients that contain good sources of protein, fibre, carbohydrates and fats.

Ingredients

  • Makes minimum 12 truffles
  • 1 1/2 cup cashews (save some for garnish)2016-07-28 16.58.33
  • 1/2 cup almond meal
  • 1/2 cup goji berries
  • 1/2 cup cream coconut
  • 2 tbsp. cacao powder
  • 1.2 cup hazelnut butter
  • 4 dates (pitted)
  • 2 tbsp. coconut oil
  • 1 tbsp. maple syrup
  • 1 tsp. maca powder
  • 1/4 tsp. cinnamon
  • pinch of himalayan sea salt

Directions

  1. Place the cashews in a food processor and whizz for about a minute. Take about 2 tablespoons of the chopped nuts out, set aside to use later.
  2. Add the almond meal, goji berries and cacao powder to the processor and blend until smooth
  3.  Now add the rest of the ingredients and keep whizzing until all ingredients are thoroughly mixed in (will form a slightly crumbly, dough texture)
  4. Transfer the contents to a bowl, mix thoroughly with your hands, then using grab about a tablespoon and roll it up into balls (should end up with about 12)
  5. Cover each truffle in the left over chopped nuts making sure they are fully covered (you can leave some plain if you prefer), place on a large plate and freeze for about an hour to set properly
  6. Take the nuts out of the freezer, transfer to a storage container and place in the refrigerator
  7. Enjoy as a snack or as dessert.
