Chocolate & Orange Covered Coconut Balls

Ingredients

2 cups desiccated coconut

3 tbsp. maple syrup

1 – 2 drops wild orange essential oil

4 tbsp. coconut oil

1 tsp. vanilla

100 grams dark chocolate

Directions

  • In a food processor, add the desiccated coconut, maple syrup, coconut oil and vanilla and blend on a high setting until it forms a doughy texture
  • Roll the mixture in small individual balls and place on greaseproof paper on a tray or plate and chill for a few minutes so they become solid.
  • Place the chocolate in a bowl and place in the oven or over a pot of boiling water to melt, add the essential oil and mix thoroughly.
  • Dip the chilled coconut balls in the chocolate and coat completely, place them back in the freezer for a few minutes to set
  • Take them out and serve. These are sure to disappear within minutes!
